Apple Turnovers
Apple turnovers are perfect when prepping a last-minute holiday dessert. With an easy-to-follow recipe and short bake time, the end result is a delectable looking (and tasty!) treat that will have your guests thinking you were in the kitchen all day long. We won't tell if you don't...
Serves 8
Ingredients
- Vegetable oil cooking spray
- 2 medium Granny Smith apples, cored and thinly sliced
- 3 tbsp apple juice concentrate
- 2 tsp whole-wheat flour
- 1/4 tsp cinnamon (plus extra for sprinkling)
- 4 sheets phyllo dough, thawed
- 1 tbsp confectioners' sugar (optional)
Preparation
Heat oven to 375°. Coat a cookie sheet with cooking spray. Toss apples, concentrate, flour and cinnamon in a bowl. Stack 2 phyllo sheets at a time and cut them in half lengthwise. Place 3/4 cup of apple mixture across the end of one half. Roll up and place on cookie sheet. Repeat until you've used up all apples. Brush top of each roll with juice from apple mixture. Sprinkle with cinnamon. Bake until browned, 15 to 20 minutes. Let cool. Sprinkle with sugar, if desired. Cut each roll in half.
Chocolate Marble Cheesecake
Reduced-fat ingredients create a light, creamy cake. Serves 12
Ingredients
- •CRUST
- 2 T slivered blanched almonds
- Vegetable Oil cooking spray
- 6 chocolate wafers
- •FILLING
- 15 oz. (1 3/4 cup) part skinm ricotta
- 8 oz. lowfat cream cheese room temp.
- 1 cup sugar or splenda
- 1/2 cup lowfat sour cream
- 1 lg. whole egg
- 2 egg whites
- 1/4 t almond extract
- 2 T all purpose flour
- 1/4 t salt
- 2 T ameretto (if desired)
- 3 T unsweetened cocoa powder
- 1/2 t instant espresso powder
- 3 T bittersweet chocolate chips
PREPERATION

For crust
Heat oven to 350˚. Toast almonds on a small baking sheet for 10 minutes, stirring occasionally. Remove from oven; reduce heat to 325˚. Coat an 8" springform pan with cooking spray. Wrap outside of pan in foil to prevent seepage. Process chocolate wafers and almonds in a food processor until fine crumbs. Sprinkle 2 to 3 tbsp crumbs onto bottom of pan (just enough to coat bottom lightly). Shake pan to distribute evenly. Reserve remaining crumbs. -
For filling
Puree ricotta in a food processor until smooth, about 1 minute. Add cream cheese, sugar, sour cream, egg, egg whites, almond extract, flour and salt; puree until smooth. Whisk amaretto, if desired (or same amount of hot water), 2 tbsp hot water, cocoa powder and espresso powder in a bowl until well combined. Stir in chocolate chips. Stir 1 cup plain filling into chocolate mixture. Set aside. -
Assembly
Pour remaining plain filling into prepared pan. Drizzle chocolate filling in a circular pattern over plain filling. Using a knife, make circular strokes to create swirls in the plain filling. Add 1 inch hot water to a shallow baking pan; place springform pan in baking pan. Bake until cheesecake is firm around the edge and slightly soft in the center, 45 to 55 minutes. Run a knife around inside of pan. Remove foil; let cool on a rack. Chill 6 hours or overnight before removing sides of pan. Press reserved crumbs onto side of cheesecake.
223 calories per serving, 9.7 g fat* (5.4 g saturated), 26.2 g carbs, 0.9 g fiber, 8.4 g protein
*This dish is slightly more than 30 percent fat but is still a healthy dessert option when part of an overall lowfat diet.

Stain Removal 101
Lipstick
Washables: Apply an oil solvent like Carbona and let dry, then remove residue. Treat with a liquid soap like Woolite and very little water. Rub to form suds, then rinse. Use an eyedropper and diluted ammonia to bleach any remaining color. Rinse with cool water.Nonwashables: Same as for washables, but use diluted vinegar bleach instead of ammonia, which can corrode wool and silk.
Coffee
Washables: Stretch fabric over a bowl and, from a height of about one foot (gravity helps), pour boiling water from a kettle. Follow with an application of an oil solvent if the coffee had milk in it. If it had sugar, treat with glycerin or a combination solvent like Shout and let sit for 30 minutes. Finish with a regular wash cycle.Nonwashables: Apply a gentle detergent like Woolite and very little water. Rub to form suds, then rinse. Use an eyedropper with diluted vinegar to bleach any remaining color. Rinse with cool water. If the coffee had milk in it, finish by applying an oil solvent.

Washables: Stretch fabric over a bowl and, from a height of about one foot, pour boiling water from a kettle. Next, use an eyedropper and diluted lemon juice to bleach any remaining color. the dawn of a First Lady with (gasp) style!
At the onset of her becoming First Lady-elect, Michelle Obama chose a bold dress for her first appearance by Narciso Rodriguez. (Did I mention I love her! Very fab! Very Jackie O!) It was a modified (read: more first lady-like) version of a piece from his Spring '09 Collection. I don't love the original, but do really dig the white one, from the same collection that is similar. It's refreshing that we will be able to see a first lady who dresses more glam than dowdy!
Here are a few of my faves of her outfits so far. She rocks the whole dress, belt, and pearls combo!

MAIN DISHES:
Obama Family Chili Recipe
•1 large onion, chopped
•1 green pepper, chopped
•Several cloves of garlic, chopped
•1 tablespoon olive oil
•1 pound ground turkey or beef
•¼ teaspoon ground cumin
•¼ teaspoon ground oregano
•¼ teaspoon ground turmeric
•¼ teaspoon ground basil
•1 tablespoon chili powder
•3 tablespoons red wine vinegar
•Several tomatoes, depending on size, chopped
•1 can red kidney beans
Saute onions, green pepper and garlic in olive oil until soft. Add ground meat and brown. Combine spices together into a mixture, then add to ground meat. Add red wine vinegar. Add tomatoes and let simmer, until tomatoes cook down. Add kidney beans and cook for a few more minutes. Serve over white or brown rice. Garnish with grated cheddar cheese, onions and sour cream.
McCain's Ribs
Dry Rub:
•1/3 part Garlic Powder
•1/3 part Salt
•1/3 part Pepper
•3 lemons
Turn the grill down to low temperature. Mix together garlic powder, salt and pepper. Then cover both sides of the ribs with that. Grill ribs, bone side down, for 90 percent of the time. It will take about an hour to an hour and a half. Squeeze the lemon on it frequently, because that makes it taste a lot better.

cowboy cookies
Ingredients (Makes about 5 dozen)
* Vegetable oil cooking spray
* 2 cups all-purpose flour
* 1 teaspoon baking soda
* 1 teaspoon salt
* 1/2 teaspoon baking powder
* 8 ounces (2 sticks) unsalted butter, softened
* 3/4 cup granulated sugar
* 3/4 cup light-brown sugar
* 2 large eggs
* 1 teaspoon pure vanilla extract
* 1 1/2 cups old-fashioned oats
* 6 ounces semisweet chocolate, cut into 1/4-inch chunks (1 cup)
* 3 ounces (3/4 cup) pecan halves
* 1/2 cup shredded unsweetened coconut
Directions
1. Preheat oven to 350 degrees. Coat baking sheets with cooking spray, line with parchment, and spray parchment. Sift flour, baking soda, salt, and baking powder into a medium bowl.
2. Beat butter and sugars with a mixer on medium-high until pale and creamy, about 3 minutes. Reduce speed to medium. Add eggs, 1 at a time, beating well after each addition. Beat in vanilla.
3. Reduce speed to low, and slowly add flour mixture, beating until just incorporated. Beat in oats, chocolate, pecans, and coconut until combined. (Dough can be refrigerated for up to 3 days.)
4. Using a 1 1/2-inch ice cream scoop or a small spoon, drop dough onto baking sheets, spacing 3 inches apart.
5. Bake until edges of cookies begin to brown, 11 to 13 minutes. Transfer baking sheets to wire rack, and let cool for 5 minutes. Transfer cookies to racks. Let cool. (Cookies can be stored up to 3 days.)
